Known for his nose to tail dining ethos and celebration of British produce, Brad Carter’s story isn’t your regular chef’s story. There were no stages in Michelin-starred kitchens, no mentors showing him the ropes. He did it the hard way, self-taught. His first job was working as a kitchen porter in his local pub where he soon began to cook and fell in love with the industry.
Now the owner of Michelin Starred restaurant Carters of Moseley in Birmingham, Brad develops his menus by following the natural rhythms of the seasons and led by the ingredients available to him, treating each ingredient with the upmost respect and admiration by limiting waste. He promotes sustainability and cultural-historical relevance.
