Anthony Demetre is chef patron of Michelin-star Wild Honey St James, in Sofitel London St James, the second iteration of the restaurant previously in Mayfair. Inspired by his Greek grandmother’s cooking, Anthony was captivated by food from a young age, and is known for bringing ‘bistronomy’ dining to Soho by opening much-loved Michelin-star restaurant Arbutus in 2006. Anthony’s cooking is a celebration of classic French techniques using seasonal British produce, giving bistro-style European dishes modern twists. In 2018 he opened Vermuteria in King’s Cross followed by Via Bicycle Atelier in 2022.
