Join the finest foraging and cookery school in the UK, specialising in adventures in wild food, outdoor living and self-sufficiency. In an off-grid outdoor HQ you will learn how to identify, gather and cook the finest wild and fresh ingredients at Wilderness and fundamental skills such as fire-making and shelter construction, helping you on your way to becoming the ultimate 21st century hunter-gatherer.
There are 3 classes to choose from so please make sure you know which one you would like to attend before booking. All classes take place between 2-4pm immediately followed by a wild cocktail and canapé reception in the woods until 5pm.

Crayfish are a non-native invasive species in serious need of being captured, removed and eaten. So invasive they are, it is actually illegal to return one if you get it out the water. Good thing they’re big and tasty! Join the HGC team at a secret lake for a session of hauling out fresh Crayfish followed by a good ol’ fashioned crayfish boil with wild dips, sides and ice cold refreshing Micheladas.
In and around the woods, fields and lakes of Cornbury Park, learn about the edible wild plants in season during high summer. Identify, taste and harvest plants to take back to the kitchen and use in the canapés and cocktails.
Hunter: Deer Butchery
In HGC’s woodland field kitchen, learn about the deer which have been shot on site, the ethics and process of deer stalking, followed by hands on deer butchery from skinning to taking apart various cuts ready for the table.
