Jay’s time in Korea and Japan cemented his love of East Asian food leading to the launch of his Modern Asian brand, Dynasty, which featured on BBC2’s new restaurant show, Million Pound Menu. 2020 saw Jay launch his permanent residency JAE at Untitled Bar in Dalston, East London. Serving small plates inspired by regional Korean dishes and his extensive travels, he’s received rave reviews from critics with Jay Rayner of The Observer calling his cooking ‘Seriously punchy Korean flavours’. He’s recently been shortlisted ‘Chef to watch 2021’ at the National Restaurant Awards and later this year will open a new pastrami and craft beer concept, in central London.
