Ed Brunet and Stephen Tozer founded their debut contemporary kebab restaurant Le Bab in 2016. After meeting at university and becoming good friends over a mutual love and respect for all things kebab, Ed, formerly of Le Gavroche, and Stephen set about bringing their take on modern kebabs to London’s Kingly Court, a new approach to an ancient dish. From pickles, bread, and toum, everything at Le Bab is made from scratch in house whilst kebabs are made from local and sustainable produce, free-range meats and seasonal vegetables and cooked on a wood and charcoal robata. Since opening the doors to Le Bab, Stephen and Ed have launched Maison Bab in Covent Garden and April saw them open Kebab Queen, a 10-person counter dining restaurant serving a seven course kebab tasting menu.
