Double-Michelin star chef Merlin returns to Wilderness having cooked at both the banquets and the Chef’s Table in previous years. Long-time champion of sustainability, Merlin opened Portland restaurant in London in 2015 and was awarded his first star just 9 months later, and at the tender age of 24. By 2016 he’d added a sister restaurant, Clipstone, with both being led by seasonal produce and underpinned by his modern take on his classical French training. In 2019 Merlin left London to open the widely acclaimed Osip in Bruton, Somerset. Embodying his farm-to-table philosophy of cooking, the menu is informed by local produce sourced from the restaurant’s allotment and garden, that’s run by the kitchen team themselves. They were awarded their first star in 2021.
