Niklas is a pioneer of Nordic gastronomy and open fire cooking. After spending time at el Bulli, The Fat Duck and Chicago’s now closed Charlie Trotter, in 1999 he opened his debut restaurant Niklas, followed by Niklas i Viken in 2003. After his food show Mat aired on Swedish national television, he felt it was time to return to his Swedish roots and launched his open fire restaurant Ekstedt in 2011. Holding a Michelin star since 2013, Ekstedt continues to be one of Sweden’s top gastronomic destinations. Author of 7 books, Niklas in 2019 launched Foodstock, a festival celebrating Swedish craft and culinary arts. In August 2020 he released Ekstedt – The Nordic Art of Analogue Cooking, his long-awaited cookbook which chronicles the evolution of the approach at his eponymous Michelin-
In September 2021 Niklas opened his first London restaurant, Ekstedt at the Yard, part of the historic 5* Great Scotland Yard Hotel and which continues to showcase Niklas’ wood fired ‘old Nordic’ cooking, focusing on Scandinavian cooking techniques using the best seasonal British ingredients. A spearhead in the progression of Stockholm’s food scene, Ekstedt’s innovative recipes and techniques have had a profound impact on the culinary scene worldwide.
