Tim Spedding & Louise Rødkjær join Woodfired Canteen to round off Ben Quinn’s weekend menu of long table dining delights.

One of our Wilderness favourites, Tim Spedding, returns to the Oxfordshire countryside for 2021 with his partner Louise Rødkjær. After working at The Ledbury for several years Tim left to open the celebrated Clove Club in Shoreditch as Head Chef, where he played a key role in putting the restaurant at the heart of London’s new gastronomy scene and helping it achieve its Michelin star and a place in the World’s 50 Best Restaurants. Following stints across Europe, including Copenhagen’s Relae, and a much talked about residency at P Franco in East London, Tim and Louise moved to Cornwall to join the team at Coombeshead Farm. Now set up independently, the pair run a delivery service available across north Cornwall, with a weekly-changing menu.
They’ll be opening their first bricks and mortar restaurant in Summer 2021, bringing a sneak peak of what’s in store to Wilderness.

Salted cabbage & lime with parsley and coriander
Cornish clotted cream & honey, wood fire roast almonds with strawberries in cider
