Long Table Banquets

“I was practically born in the kitchen; my parents had a bouchon in Lyon where I grew up. Even though my mother never dared let me near the kitchen as a kid, cooking has always been a passion.”

Claude, born in 1972, is the son of Italian parents who moved to France to open a bouchon. He graduated from catering college and did his apprenticeship in Lyon; he moved to Paris to Le Chiberta (Michelin two star).

His next position was in Paris with Alain Passard at L’Arpège, during this period the restaurant moved from two to three Michelin stars. Claude moved to England in 1997 to Overton Grange in Shropshire. The restaurant earned a Michelin star under his role as Head Chef in 1999. Claude opened his first restaurant; Hibiscus in Ludlow in 2000, in 2001 the restaurant was awarded its first Michelin star, followed by a second in 2004. Claude relocated Hibiscus to London in March 2007.

Hibiscus received numerous accolades for its modern French cuisine: two Michelin stars in 2003, a 9/10 rating and #5 in the UK in the Waitrose Good Food Guide, and five rosettes in the AA Restaurant Guide. Hibiscus was also recognised as a member of the Relais & Châteaux and Les Grandes Tables du Monde Qualité & Tradition guides. Claude closed the doors of Hibiscus in October 2016.

Claude is one of the only chefs to have relocated a two Michelin star restaurant from outside of London to the capital and retain two stars.

Refunds & Exchanges

  • Please note extra experience bookings are non-refundable and non-exchangeable.
  • Experiences will only be held for 15 minutes, after that tickets are subject to resale and will be automatically cancelled without refund.

Outdoor Experiences

  • Outdoor experiences will take place come rain or shine.

The Spa

  • You must bring your own towel.

Wellbeing in the Wild Experiences

  • Meet 20 minutes before the designated start time at the Wellbeing in the Wild Meeting Point, located next to the Sanctuary Reception. Your teacher will then accompany you to the relevant location for your session.
  • In adverse weather conditions, please still head to the Wellbeing in the Wild Meeting Point, as most sessions will still go ahead come rain or shine. Any sessions that cannot go ahead will be automatically refunded within 2 weeks post-festival. We do not offer refunds if you decide not to join a session that still goes ahead.
